N° 27.130 del 22/01/92 BUENOS AIRES, 16/1/92 VISTO el expediente n° 4.347/91 corresponde 1 del registro del SERVICIO NACIONAL DE SANIDAD ANIMAL por el cual se propician modificaciones al Capítulo XVI del Reglamento de Inspección de Productos, Subproductos y Derivados de Origen Animal, aprobado por Decreto n! 4.238 de fecha 19 de julio de 1968 y sus modificatorios, y CONSIDERANDO: Que resulta necesario mantener actualizada la normativa del Decreto Reglamentario n° 4.238/68. Que las nuevas exigencias del mercado hacen necesario a la industria, la adecuación de los tipos de presentación de sus productos y un mayor tiempo de conservación. Que el consumidor debe ser informado detalladamente sobre la forma y tiempos de conservación. Que el suscripto es competente para resolver en ésta instancia, en virtud de las facultades conferidas en la Ley 23.899. "Definición: Se entiende por embutidos frescos a aquellos que han sido elaborados con carnes " y subproductos crudos, con el agregado de sal, especias y aditivos de uso permitido, " que no hayan sido sometidos a procesos térmicos o de ahumado". "Plazo de validez: Los embutidos frescos serán mantenidos a temperaturas entre -2° C " (MENOS DOS GRADOS CENTIGRADOS) y 5° C (CINCO GRADOS CENTIGRA" DOS) y la fecha de vencimiento, acorde con el criterio técnico del elaborador, no " podrá exceder los 7 (SIETE) días.". " Cuando dichos embutidos se encuentren envasados al vacío o en atmósfera controlada " y mantenidos a la temperatura antes mencionada, se consignará una fecha de venci" miento de acuerdo al criterio técnico del elaborador, no pudiendo superar los 15 " (QUINCE) días.". " Cuando los embutidos hayan sido congelados inmediatamente después de su elabora" ción a temperaturas no superiores a -18° C (MENOS DIECIOCHO GRADOS CEN" TIGRADOS), se consignará una fecha de vencimiento de acuerdo al criterio técnico " del elaborador, no puediendo superar los 180 (CIENTO OCHENTA) días.".
