BUENOS AIRES, 20/9/1995 VISTO el expediente n° 10.684/95 del registro de este SERVICIO NACIONAL DE SANIDAD ANIMAL, mediante el cual la Comisión Permanente de Estudio y Actualización del REGLAMENTO DE INSPECCION DE PRODUCTOS, SUBPRODUCTOS Y DERIVADOS DE ORIGEN ANIMAL, aprobado por Decreto N° 4238 del 19 de julio de 1968, propicia la modificación de los numerales 18.3.12; 18.5; 18.5.1. y 23.14.60 del citado reglamento, y CONSIDERANDO: Que se han producido avances en la utilización de los diversos aditivos para la conservación de productos cárnicos. Que en la bibliografía internacional consultada, se comprueba que es permitido el uso de sales nitradas en la conservación de productos industrializados en base a carnes de aves. Que tanto el CODEX ALIMENTARIO, las normas de la UNION EUROPEA como el FEDERAL CODE REGULATION reconoce el uso de estos aditivos en esas carnes. Que países integrantes del MERCADO COMUN DEL SUR (MERCOSUR), aceptan el uso de dichos aditivos en carnes de aves. Que las tolerancias para aditivos, son inferiores a los admitidos por nuestra legislación. Que la SUBGERENCIA DE ASUNTOS JURIDICOS, ha tomado la intervención que le compete Que el suscripto es competente para resolver en esta instancia de conformidad con lo establecido por el artículo 33 del anexo I del Decreto N° 1553 del 12 de agosto de 1991, reglamentario de la Ley N° 23.899, Por ello, EL ADMINISTRADOR GENERAL DEL SERVICIO NACIONAL DE SANIDAD ANIMAL RESUELVE: ARTICULO 1°.- Modifícase el texto de los numerales 18.3.12; 18.5; 18.5.1. y 23.14.60. del REGLAMENTO DE INSPECCION DE PRODUCTOS, SUBPRODUCTOS Y DERIVADOS DE ORIGEN ANIMAL aprobado por Decreto N° 4238/68, los que quedarán redactados según el anexo I de la presente Resolución. ARTICULO 2°.- Comuníquese, publíquese, dése a la Dirección Nacional del Registro Oficial y archívese. Bernardo G. Cané. ANEXO I RENOVACION SALMUERAS 18.3.12. - Las salmueras utilizadas en las salazones deberán renovarse o normalizarse cuando a criterio de la Inspección Veterinaria sea necesario. La normalización será hecha en agua potable y cloruro de sodio en primer uso y de la calidad aceptada por el reglamento. NITRATOS DE SODIO Y POTASIO 18.5. - Nitrato de potasio o de sodio (salitre) se admite su uso en productos cárnicos como conservador y para carnes rojas y derivados en particular, como estabilizador de color. Se permite hasta TRESCIENTAS (300) partes por millón en el producto terminado. NITRITOS DE POTASIO Y DE SODIO 18.5.1. - Nitrito de potasio; nitrito de sodio se admite su uso en productos cárnicos como agentes conservadores y en carnes rojas y derivados en particular, como estabilizadores de color. Se permite hasta CIENTO CINCUENTA (150) partes por millón en el producto terminado.
